Sweet Potato & Goat Cheese Bites




Directions
Slice your sweet potatoes into circular discs, about 1/2 - 1 cm thick. Spread them out so they are flat on a cookie sheet. Dress with EVOO, salt, and pepper. Roast at 400F for 5-10 minutes minutes, or until they begin to show a toasty color, flip and roast on the other side for 5-10 minutes until soft and golden.
Let them cool, top with a dollop of goat cheese, and our Holiday Roasted Pecans. Can be served hot or cold. To serve hot, after you spread goat cheese on the sweet potatoes, broil for 1-2 on high, then top with the pecan.
