Avocado Mint Truffles

Ingredients

1 cup semisweet morsels, or chocolate of your choice

2 ripe avocados

2 tbsp cocoa powder

1 tsp mint extract

 

Directions

Put the chocolate chips in a microwave safe bowl. Microwave for 30 seconds, stir, then microwave for 30 more seconds. Mix the avocados and chocolate in a food processor. Add in the mint extract and cocoa powder, mix again.

Form the mixture into 1 inch round balls, place on parchment paper, and refrigerate for 30 minutes.

Remove the balls from the refrigerator and toss each in cocoa powder. Keep refrigerated, or frozen, and enjoy.
