Greek Quinoa Salad




Ingredients
1 cup dry quinoa
1/4 cup red wine vinegar
1/4 cup EVOO
1 tsp garlic
1 tsp lemon juice
1/2 tsp oregano
Salt and pepper, to taste
1/2 cup cherry tomatoes
1/2 cup cucumber
1/4 cup red onion

Our favorite way to eat this meal is with salmon on top! Follow the directions below for a twist on our Greek Quinoa Salad!
Marinate the salmon fillets in Primal Kitchen greek dressing for about 1 hour. The salmon can marinate longer than 1 hour—the more time the better!
Cook in a pan over low-medium low heat for about 6 minutes per side. To serve, plate the salad mixture first, followed by the salmon on top. Top the salmon with extra fresh veggies, either ones that didn’t get used in the quinoa salad or reserve some of the veggies that were marinating in the vinaigrette. Enjoy!
