Hot and Tangy Pulled Pork
Ingredients
Pork:
1 pork tenderloin, recommend 2 lbs.
2 teaspoons paprika
1 teaspoon cayenne pepper
Salt and pepper
½ cup white vinegar
12 oz. can hard apple cider
½ onion, sliced
2 sweet potatoes
Slaw:
2 bell peppers, julienned
1 cucumber, julienned
1 green apple, thinly sliced
2 tablespoons spicy mustard
¼ cup white balsamic vinegar
¼ cup EVOO
Salt and pepper
Directions
In a slow cooker, combine the pork tenderloin, paprika, cayenne pepper, salt and pepper, white vinegar, hard apple cider, and onion (thinly sliced). Turn to low heat for about 5 hours. Once cooked, shred the meat, and put back into the slow cooker to combine with sauce.
Slice the sweet potatoes ½ inch thick. Brush with EVOO and broil until it is golden brown, flip them, and broil the other side until it is golden brown, about 5 minutes.
To make the slaw, combine peppers, cucumber, and apple. In a separate bowl mix the mustard, balsamic vinegar, EVOO, and salt and pepper to taste. Pour the sauce over the pepper, cucumber, and apple slices. Combine, and let sit.
To serve, place pork on top of a broiled sweet potato slice, top with slaw, then put another sweet potato slice on top. Feel free to make it an open-faced sandwich as well!
