Fig and Prosciutto Pizza

Ingredients

1 Cauliflower crust, our favorite is Caulipower

4 oz Prosciutto

3 fresh figs

½ red onion

1 ½ cups balsamic vinegar

Goat cheese

Arugula


Directions:

Disclaimer: The following cooking directions are for a Caulipower crust, but if you are using a different type, follow those directions!

If you are using a Caulipower crust, keep it frozen until you add the toppings. To make the toppings, heat thinly sliced red onion over medium heat with ½ cup of balsamic vinegar, and salt and pepper to taste until they are translucent. To prepare the pizza, first put down the onions in the balsamic vinegar. Then put pieces of prosciutto, sliced figs, and clumps of goat cheese (pictures are above for reference!). Brush the edges with EVOO. Bake at 425F for 13-15 minutes. To make the balsamic reduction drizzle, heat 1 cup of balsamic vinegar over medium high heat stirring frequently until it becomes a syrup-like consistency. When the pizza is done, top with arugula and drizzle over the balsamic reduction. Enjoy!
