Peanut Butter Bites
Ingredients:
1 cup of your favorite peanut butter
1/4 dried unsweetened coconut
1 cup gluten free rolled oats
2 tbsp honey
1/2 tsp vanilla
1/4 cup chocolate chips or peanuts (optional)
Directions:
In a bowl mix together the ingredients. Form into equal sized 1 inch balls. Place on wax paper. Refrigerate for 30 minutes. Store in an air tight container at room temperature, or frozen.
Note: Feel free to get creative with your mix ins to make these snacks even more perfect for the mid-day pick me up snack!
