Stuffed Peppers




Ingredients
1 lb. ground beef, turkey, or chicken (we recommend beef)
McCormick’s Organic Taco Seasoning
4 bell peppers
½ of a white onion
10 oz can yellow corn
15.5 oz can black beans
Salsa, of your choice
Shredded cheddar cheese
½ tsp Adobo seasoning
Red pepper flakes, a dash for flavor
1 tsp cumin
1/8 tsp chili powder
1/8 tsp paprika
1 tbsp EVOO
Directions
Preheat the oven to 350F. Cut the tops off of the bell peppers, remove the flesh, and bake for 10 minutes to dry them out. Brown the ground beef, or other ground meat of your choice, with the McCormick’s Organic Taco Seasoning. While that is cooking, get started on the corn and beans mixture. Add the onion, diced, to a frying pan with 1 tbsp EVOO. Once the onion has started to soften some, add the corn and black beans to the pan with the onion. Stir in the cumin, chili powder, paprika, adobo, and a pinch of red pepper flakes for some added heat if you desire. Now, it’s time to load up the peppers. We like to load ‘em up in layers, so first put some meat down, then a layer of the corn and beans mixture, then top with a layer of cheese and salsa, then again with the meat, the corn and beans, this should bring you to the top of the pepper. Top with cheese and bake at 350F for 20-25 minutes. Serve, serve warm and top with a dollop of salsa.
