Independence Day Cake Pops



Ingredients:
Red, white, and blue Wilton candy melts (no more than 1 bag of each)
Gluten free cake
1 cup of your favorite icing, we like buttercream
Styrofoam cubes (1 for every about 8 cake pops), optional
24 lollipop sticks
Cake Balls:
Bake a gluten free cake according to the directions on the box or the recipe. When the cake is cool, tear the cake up into chunks. Use a food processor or a hand mixer to break the chunks up into small crumbs (we used our NutriBullet). Mix the crumbs with about 1 cup of icing. You don’t want them to be too sticky, so vary it based on how moist your cake is. The icing is the glue to keep the cake balls together! Form the mixture into balls about 1 to 1 1/4 inch in diameter. Store the balls equally spaced on parchment paper, and cover. Refrigerate for at least 2 hours.
Shell:
Separate the candy melts into microwave safe bowls, one for each color. You do not need to put the entire bag into one bowl, you can always come back and microwave more.
Melt down the chocolates by microwaving and stirring them in 30 second increments. Choose one color to be your base; for our red, white, and blue cake pops, we chose white as the base.
Pour some of this color into a separate, clean bowl that will be used as your dipping bowl. For the dipping bowl, we recommend something on the deeper and narrower side, like a two cup measuring cup. On top of the white melted chocolate, drizzle red and blue melted chocolate mixture over the white, we recommend drizzling as zig zags of each color.
Take a lollipop stick and dip the end into melted chocolate, any plain color will work, to act as a glue. Then push the stick about 3/4 of an inch into the cake ball. Now, fully submerge this cake ball into your dipping bowl with all three colors layered, do not twirl it as you submerge the cake pop.
As you pull the cake pop out, use a twirling motion to give the cake pop a swirling pattern. You should be able to see all three colors. Set the cake pop in a styrofoam cube to harden. You can do a few cake pops before needing to re-drizzle the colors. When you do re-drizzle, drizzle all three of the colors. You do not need a clean bowl, you can just keep adding more the the dipping dish. Refrigerate for 1 hour, then, enjoy!
